Salsa Verde Veggie Burger

Burger Buns with Sesame

Ingredients:

  • 2 Burger Buns with sesame seeds
  • 400 g of broad beans
  • 1 cup of fresh spinach
  • 2 slices of cheddar cheese
  • Avocados
  • 20g semi-skimmed feta cheese
  • Pinch of pepper
  • 1 jalapeno, sliced
  • 4 tablespoons of salsa (you can use ready-made or prepare your own)
  • 3 eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • Handful of arugula

Preparation:

Step 1
Cook broad beans until tender in salted water. Once cooled, peel off the skin.
Step 2
In a large dish, place the drained broad beans and blitz or mash with a fork until a smooth paste forms. Add finely chopped spinach, egg and mix. Add crumbled feta cheese to the broad bean mixture to taste. Stir to combine the ingredients. Season with pepper as desired.
Step 3
Form two burger patties from the bean mixture.
Step 4
In a bowl, scramble the eggs. In another bowl, place the bread crumbs.
Step 5
In a frying pan, heat olive oil.
Step 6
Dip each cutlet in egg, then coat in breadcrumbs.
Step 7
Fry the pork chops in a hot skillet for about 4-5 minutes on each side, until they are well browned and crispy.
Step 8
While the chops are frying, heat the hamburger buns. Then place arugula on each bun, place the fried bean cutlet. Place cheddar cheese slices, salsa, avocado slices and jalapenos on top of the cutlet.
Step 9
Fold the rolls and heat for a while so that the cheese begins to melt slightly.
