Brioche Batat Burger

Brioche Burger

Ingredients:

A chop with yams and chickpeas:
  • 1 large yam
  • 1 egg
  • 0.5 cans of chickpeas (about 200g), drained
  • 1 onion, finely chopped
  • 1 clove of garlic
  • 1 tbsp potato flour
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika powder
  • Salt and pepper to taste
  • Frying oil
Other ingredients:
  • 2 Dan Cake Brioche Buns
  • Caramelized onions (you can prepare them in advance)
  • A few lettuce leaves
  • A few slices of pickled cucumber
  • Tomato slices
  • Mayonnaise
  • Slices of cheddar cheese

Preparation:

Step 1 / Prepare yam and chickpea cutlets
Peel the yam from the skin and roast it in the oven or cook it until it is soft. In a bowl, blitz or mash the yam with a fork, combine with the egg, drained chickpeas, chopped onion, garlic, potato flour, cumin, paprika powder, salt and pepper. Form the mixture into thick cutlets. In hot oil, fry the cutlets on both sides until golden and crispy.
Step 2 / Assembling the burgers
Heat the Dan Cake Brioche Buns in a skillet or in the oven until they are slightly crispy. Spread mayonnaise on the bottom part of the bun. Lay lettuce leaves on it, followed by a chop of yams and chickpeas. Place slices of caramelized onions and cheddar cheese on the cutlet. Add slices of pickled cucumber and tomato. Cover with the top of the bun
