Falafel Fiesta

Spelt tortilla

Ingredients:

  • 2 spelt tortillas
For falafel (you can also buy pre-made falafel in advance):
  • 1 cup of dry chickpeas
  • 1 onion
  • 3 cloves of garlic
  • 1/4 cup fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon of garam masala spice
  • A pinch of salt
  • Pinch of pepper
  • Frying oil
Other additions:
  • 1 large tomato
  • 1 green cucumber
  • A few leaves of lettuce or spinach
  • 1 red bell pepper
  • A few slices of red onion
Sauce:
  • Natural yogurt
  • Lemon juice
  • Salt and pepper to taste

Preparation:

Step 1 / Prepare falafel
Soak chickpeas for at least 6 hours or preferably overnight. Then drain.
Place the soaked and drained chickpeas, onion, garlic, garam masala, parsley, cumin, salt and pepper in a blender. Blend until smooth.
Form small balls from falafel mixture. In a deep skillet or pot, heat oil. Fry the falafel balls until golden brown on each side, about 2-3 minutes. Remove from the pan and drain on a paper towel.
Step 2 / Folding the tortillas:
Warm the tortillas briefly in the microwave or in a dry skillet for a few seconds to make them more pliable and easier to wrap.
Step 3 / Prepare the sauce
In a bowl, mix natural yogurt with a little lemon juice, salt and pepper.
Pour the prepared sauce over the tortillas or place it on the side so that everyone can add as desired.
Gently roll up the tortillas, forming rolls or folding it into a triangle.
