Ingredients:
- 2 baked wheat tortillas
- 8 pieces of falafel
- 4 tablespoons of hummus
- 4 tbsp crumbled feta cheese
- 2 tablespoons of sliced olives
- 2 tablespoons of pomegranate seeds
- Fresh parsley or oregano for sprinkling
- Red pepper to taste
- A few drops of lemon juice for sprinkling

Step 1 / Prepare falafels
If you are using pre-made falafels, heat them according to the instructions on the package. If you are preparing falafels from scratch, make them according to the recipe of your choice.

Heat a tortilla in a dry skillet for a few seconds on each side until soft and pliable.

On a toasted tortilla, spread 2 tablespoons of hummus and lay out 4 falafels. Sprinkle with crumbled feta cheese, olives and pomegranate seeds and fresh parsley or oregano. Season with red pepper as desired. Roll up the tortilla, starting at the bottom and folding up to form a tight roll. Before serving, sprinkle the tortilla with a few drops of lemon juice for additional flavor.
